Dragons have a natural intuition about treasures. Even without the knowledge of treasure appraisal, they can vaguely feel the special value of an object.
If an ordinary-looking thing can make him feel its huge potential value, it must be some magical or divine weapon.
Ganon had seen at least four supreme artifacts. When Baphomet took out the helmet and put it on himself, he immediately realized that the helmet was as valuable as those artifacts.
Ganon was not sure whether Baphomet himself carried such a sacred artifact, or whether this was the Grand Duke's heirloom that was temporarily stolen by Baphomet.
But in either case, it makes no difference what he has to do.
