Add a little water to the red bean puree and bring to a boil over low heat. Add a small piece of gelatin to dissolve. Pour into a square grinder and cool to form.
Bring water and sugar to a boil. Squeeze in fig juice. It doesn’t need to be too much. The water will turn into powder slightly. When it is warm, dissolve the gelatin in the same way. Pour it on the already formed red bean paste. Then add the peeled and sliced figs. Wait. Cool and shape, then cut into small pieces.
The finished fig yokan is divided into two layers. The bottom third is made of maroon red bean paste, and the top is light pink and transparent. You can see the red and pink fig flesh in it. It is really beautiful.
